PB Goodness Recipe
This week I created a recipe that is perfect for when you want a hearty and quick meal. Total prep and cooking time is around 10minutes. Hope you like it!
Coconut Dal with Naan
Ingredients (makes 2 servings):
Ingredients:
For the dal:
2tsp ground turmeric
1.5tbsp curry powder
80-90g coconut yoghurt
For the salad:
1/2 cucumber
150g cherry tomatoes
Fresh coriander
Fresh mint leaves
20ml white wine vinegar
Salt
Pepper
Brown rice and naan bread for serving
Method:
Preheat the oven to 200°C.
If you chose to serve it with rice, now is the time to cook it.
Heat a pan with a spoon of vegetable oil over medium heat. Once hot, add the curry powder, ground turmeric, ginger paste and garlic paste, mix it all together and cook for about 30 secs and it starts releasing flavours.
Add the lentils to the pan, mix with the spices and cook for about 30 secs.
Add 100ml of hot water to the lentils and mix it all together. Make sure spices are mixed in well and there are no lumps. Reduce the heat to low and allow it to cook for another 3 minutes.
Add your naans to a baking tray and put in the oven for 5 mins
Now it’s time to prep your salad. Chop the cucumber in quarters and cherry tomatoes in halves. Chop the mint leaves and coriander. Add it all to a bowl and top with a drizzle of olive oil, white vinegar and some salt and pepper. Give it all a good mix.
Remove the pan from the heat and stir in the coconut yoghurt. Sprinkle with nigella seeds. That’s your dal.
Serve dal, salad and rice in separate bowls.
Enjoy!
PB Reviews
Where I review some of the latest and most popular plant-based products out there.
THIS was created by two ex-burger chain founders who used their in-depth knowledge and love of meat to replicate it in texture, appearance and taste.
THIS is plant-based food for meat lovers. […] It is possibly the most realistic meat-alternatives in the world […] Ridiculously high in protein, Source of vitamin B12 & iron, Proudly GMO-free, Suitable for vegetarians & vegans
I had to try it.
Verdict…
THIS ISN’T CHICKEN is definitely super easy to prep. It takes a few minutes of warming up in the pan and as it’s already seasoned with salt and pepper - you don’t need to do anything else.
I tried it in a wrap, on its own and in a salad and unfortunately, it was quite disappointing.
It tasted very dry, was a bit chewy and flavouring was not strong enough. Great idea, clever branding but the taste just isn’t there.
