Veganuary Do’s and Don’ts
If you’ve decided to take on the Veganuary pledge, here are some tips that may come in handy.
DO’s
Remove all non-vegan things from your cupboards, fridge and freezer and put them aside for the month of January or give to family and friends - this will make it easier to stick to your plan
Stock up on vegan foods. That does not only include vegs but also some staples such as milk alternatives or vegan butter etc.
Eat the rainbow to get the nutrients you need i.e. red cabbage, greens etc.
Make sure you have vegan alternatives of foods you “can’t live without” i.e. bacon, burgers, sausages (note: not all plant-based alternatives are vegan! always check the label)
Prepare your meals and cook in bulk
DON’Ts
Make sure you enjoy the Veganuary and don’t look at what you can’t eat. The whole point of this experience is so you can explore new recipes and foods and perhaps keep them in your diet for longer
Don’t worry if you accidentally make a mistake. The main thing is to learn and move forward. Like any big shift in diet and lifestyle, you might struggle at first but the main thing to do is to keep going
Don’t overthink protein. As long as you eat the rainbow of veg and a variety of foods, you will be fine
PB Goodness Recipe
This week’s recipe is one of my favourite takes on an Indian Biryani.
It takes about 20mins to make and you only need a handful of ingredients.
Biryani with Green Beans
Total prep time: 20-25 minutes
Ingredients:
1 brown onion
2 garlic cloves
10g fresh ginger
130-150g basmati rice
100g fine green beans
1 Knorr vegetable cube stock
20g tomato paste
Salt & pepper
80g coconut yogurt (I use The Coconut Collaborative Natural Coconut Yoghurt)
Optional: 200g vegan mince such as Meatless Farm or Vivera)
Method:
Peel and finely chop the garlic and ginger. Peel and dice the brown onion
Heat a wide-based pan with 1 tbsp oil (you will be making the whole dish in this pan so make sure it is big enough), once hot add ginger, garlic and onion with a pinch of salt and pepper and cook until soften
Cut the green beans in smaller pieces
If you are using the meat-free mince, now it’s the time to add it to the pan. Make sure you break it up with a spoon
Add the tomato paste and crumple veg cube over the mince. Mix well
Stir in the basmati rice and add 500ml of cold water
Add the halved beans and bring to boil
Once boiling, reduce the heat to low and cook covered until the water is absorbed and the rice is cooked
Serve with a dollop of coconut yoghurt on top
Enjoy!
Tip: to add even more flavour to the dish you can also add a handful of sultanas in step 7

Verdict…
Full of flavour with a texture similar to the real thing - this jerky is amazing! Delicious and filling, perfect for snacking on the go.
