Vegan swaps for Veganuary
If you’re through your week two of Veganuary - congrats! Are there any foods that you are missing in particular? Here are some simple swaps of the foods that I missed a lot after going plant-based that you may find helpful:
PB Goodness Recipe
This week’s recipe is one of my favourite breakfasts and it is going to make your mornings 100x better.
Chia Overnight Oats
Total prep time: 5 minutes
Ingredients:
1/2 cup oats
2 tbsp chia seeds
3/4 cup of plant-based milk
Pinch of cinamon
Maple syrup or honey
1/2 cup frozen berries
Nuts and honey for topping
Plant-based yogurt from topping
Optional: 1/2 scoop chocolate protein
Method:
The night before:
Place the oats, chia seeds, milk, and cinnamon in a jar with a lid. Refrigerate overnight
Optional: add 1/2 scoop of protein
Leave berries out to defrost overnight
Morning:
Puree the berries
Stir oats with your frozen berry puree and top with yogurt, honey, nuts and whatever else you like

This week I’ve tried Naked’s Glory roast tenderstrip - “free of meat, full of taste. Flame-grilled veggie protein fillets”.
Verdict…
These are amazing! Easy to cook, great texture (very chicken-like) and high on flavour.
Fry them with a little oil till they are crispy and eat them straight away, put in a wrap or in a hot dish such as curry.
Give them a go - you won’t regret it!
